Fiber
Americans eat 12 grams of fiber
on an average a day. The National Cancer Institute recommends that we consume
20-30 grams a day. The same amount Americans ate in 1850.
The richest sources are: whole
grains (brown rice, whole wheat, bulgur, millet, buckwheat, rye, barley,
spelt, oats, and quinoa)
Legumes (all beans except green
beans), vegetables and fruits.
